WINEMAKING NOTES

This méthode traditionnelle sparkling realises James’ long-held dream, shaped by his mum Gillian’s early influence and their shared love of Champagne. Chardonnay from two cool South Australian regions — a low-lying Coonawarra site and a higher vineyard in the Mount Lofty region of Adelaide Hills — is cold-fermented with a selected Côte des Blancs yeast for purity, then lees-matured in earthen vessels before 30 months’ bottle ageing. A low dosage highlights its fine bubbles, bright acidity, and elegant autolytic complexity.
